The liver is a complex system of cells that filtrates and processing the nutrients and chemicals we absorb from our food. Our livers have evolved based on our environment and what is readily available for consumption. For example Japanese are better at digesting raw fish than their counterparts, southern Asia has difficulty digesting meat protein because their diet is mainly vegetarian, and so forth.
